This year, I planted 12 celery starts, and 8 of them have done really well. That's a lot of celery, it doesn't freeze well, and isn't safe to can. So, what to do?
I'm going to make some Tomatoes and Celery (recipe from the Ball Blue Book). Equal parts of celery and tomatoes... salt and boiling water, in the pressure canner. My harvested celery yielded 6 pints:
With the remaining tomatoes, I used Ball's crushed tomatoes recipe, which yielded another 10 pints (these are plain, just with salt, so I can add whatever flavors I want, later!):
And all the leaves from the celery aren't going to waste. I have 2 bags in the freezer for stock, and the rest was dehydrated and will be celery flakes!
