2022 In Review! A Cannery Update

I definitely did not can as much this year as I did in the past two years, but I have continued to can, steadily, especially some of my favorites. As i sit here on a snowy, Minnesota evening, waiting for the year to end, I wanted to do a quick update.


 

My Most and Least Favorite Jars from 2022

The Things I will definitely can again next year:

Tomato Sauce

Roasted Tomato Soup

Green Beans

Sweet Corn

Mexican Corn (great on n nachos!)

Ugly Chicken

Stock - all types

Cherry Jam

Posole

Beef Stroganoff (possibly with the left over and frozen Christmas Prime Rib!)

Hearty Chicken Stew

Strawberry Rhubarb Jam

Blackberry Jam (the sugar free was a failure!)


Things I probably won't can again next year:

Tomato Paste

Holiday Spice Jam (at least made without enough strawberries)

Ground Beef

Hatch chiles (we still have many from 2 years ago, and they were so much work, it's not hard to just purchase them!)


Things I want to try to can next year:

More of the prepared foods for quick weeknight dinners.

More soups

Salsas

Jalapeño jam, cowboy candy again or pickled jalapeños



 

That's the wrap of canning for the year. I don't have a total count of how many jars I canned or how many are still in the pantry, but my kitchen shelf is full and my basement stash is only 1 shelf, which is a much more reasonable level of canned jars of food for my small household!
